Three days is the sweet spot for Cappadocia — enough time for the balloon flight, the major valleys, an underground city, and some slower exploration without the trip feeling like a checklist.
Day 1 — Balloon flight and Goreme. Book the balloon ride for your first available morning — flights depend on weather and cancellations happen, so putting it on day one gives you backup days. You will be picked up from your hotel around 5:00 AM, watch the inflation, then fly for roughly an hour over the valleys as the sun rises. After landing, head to the Goreme Open-Air Museum (arrive by 9:00 AM to stay ahead of the tour buses). The rest of the afternoon is for wandering Goreme itself — rooftop terraces, Turkish tea, views.
Day 2 — Valleys and underground city. Start with a morning hike through Rose Valley and Red Valley — the trail takes about two to three hours and passes through rock-cut tunnels, abandoned cave churches, and landscapes that shift colour with the light. In the afternoon, drive to Derinkuyu Underground City (about 30 minutes from Goreme). End the day at Uchisar Castle for sunset views over the entire region.
Day 3 — South Cappadocia. Head to Ihlara Valley, about an hour south — a 14-kilometre gorge with a river, cave churches in the cliff walls, and a fraction of the crowds near Goreme. Stop at Selime Monastery on the way back — the largest rock-cut monastery in the region. Wind down with a pottery workshop in Avanos.
